Not only is this Plum Sponge Pudding nice and light and really fluffy, but it is also beautiful to look at. It is mouth-watering and really addictive, so it’s not surprising it is a great favourite with everyone I know who’s tried it!
I sometimes make two Plum Sponge Puddings, I cut them in half and freeze them, ready for when I have guests turning up unexpectedly, or for a weekend treat. This pudding will keep very well after de-frosting. I sometime make vanilla custard to serve with it, a lovely combination.
