Rum and raisin pancakes

who doesn’t like them? Especially since you can tweak and change them in any way you want. You can make them thin, like French crepes, or thick or fluffy like the American do, and many more varieties. Pancake Day is always on a Tuesday in February, it is the day before Ash Wednesday. Here in the UK they eat pancakes with lemon and sugar, unlike me because I prefer honey, jam, maple syrup, chocolate and sometimes fruit.

Another tradition on Pancake Day in the UK is pancake racing. People run in a race with a pancake in a pan. As they run, they have to toss the pancake (throw the pancake in the air and catch it in the pan).

I often get asked what is the difference between crepes and pancakes? Well, to me I think pancakes are a little simpler and you can use the same batter as Yorkshire pudding, but with crepes you add butter, sugar and vanilla, and you make them with love.  For me that is the difference, but  I am sure someone out there may know otherwise – let me know! We all have a way of enjoying making food.
