My Strawberry Meringue with Pistachio looks and tastes gorgeous. Crunchy yet light, and really colourful and fresh. The inside of the meringue stays really soft and chewy but the outside is crisp and crunchy. I am telling you this is divine – don’t just take my word for it, make it! This is also my quick and easy dessert that I make when I want to plan a party the next day. This is a life saver when you are in a hurry, as you can prepare it a day early, then all you have to do is assemble it. There are many ways of making meringue – some add corn flour, vinegar, etc, but like it this way – Strawberry Meringue and Pistachio go really well together. The only trouble is that it’s a bit too hard to resist. You can add any filling that you fancy. I just happened to have strawberries at that time. We all love strawberries here in my house, we even go and pick them in the fields when they are ready, I eat some then I put some in my punnet, I am lucky I live only few miles to a well-known place called Cheddar where they are grown in great numbers – they are very popular when they are very ripe, sweet and juicy. Cheddar is well-known for its strawberries, cider, and cheese and pickles, and cream teas.
