What a beautiful fish we have here. Skate wing with black butter. Its really easy just scrape off the flesh from the bones, and it’s also easy to use any spice, unlike some fish. This fish will even work well with curry sauce, because it’s meaty, and anything with meat works well with any kind of spice. This recipe was given to me by Graham the fishmonger that I have known for a long time. I am very grateful to him as I love it.
What do we know about skate? Well, it comes in all kinds of sizes. They take up to six years to reach breeding maturity, they also grow to huge sizes. It is important that you soak the skate in water for at least 2 minutes. This method was told to me by the fishmonger. The reason for this is to ensure that all unwanted liquid is cleansed from the body and wings.
I think it’s really important to get to know your fishmonger, as they can offer you great tips and information you need to know about fish in general. (and sometimes you get the best choice of fish from them!)
