Chicken in Red Wine with Chorizo

It was cold and miserable when I created this recipe – Chicken in Red Wine with Chorizo. It’s really nice and easy to make, and I love the aroma that comes from cooking this dish. I had a little wine left from the night before, so I thought I know what to make – and that’s how I came up with this beautiful dish.

Oh my goodness, this turned out to be so tasty and full of flavours, it’s really too good to share!

If I had my way I would make this all through the winter, but I don’t think I would get away with it – my husband and family like plenty of variety in their meals.I like to serve this dish just with mashed potatoes, as it compliments this dish very well indeed.

Many people use whole chicken when making stews or casseroles but I think thighs are full of flavour and they are easy to fillet if you want, I often make many dishes with this part of the chicken – you really should try it. Lets face it, who wants to clean then chop a whole chicken when you can make things a lot simpler and quicker by having just part of chicken all ready for you to cook?

So…. when you might be feeling a bit cold and full of the winter blues, just cook this fabulous comfort food. Warming, satisfying comfort food can be anything you choose it to be – it just has to work for you.
