Baked Whole Chicken Masala in Banana Leaves

I like to cook meat, chicken or fish wrapped in banana leaves. This Baked Whole Chicken Masala in Banana Leaves will create a distinctive flavour and aroma. It also keeps the chicken nice and moist. This type of cooking is very easy as long as you can get hold of the banana leaves and you can use your own imagination with the spices. I even make Mediterranean spices and it turns out beautifully.

Most of my life revolves around food – I don’t know how to welcome my friends or especially my family without presenting them with my home-made good food. Someone once said to me ‘why do you like cooking this much?’ Well!!! I find cooking therapeutic and relaxing. I also enjoy cooking very much – that is just the way I am! As for the person who asked me that question, to them cooking was a chores – that doesn’t make sense to me! They do tell me that my husband is a lucky men, yes I think he is and he knows it too. Although he does spoil me so I can’t complain.

I must point this out however: although I enjoy cooking that does not mean I don’t like going out to eat, as it makes a nice change for me. Well here is the deal we have in my family -I cook (fresh as always!) Monday to Friday but I don’t cook over the weekend, as my husband agreed this with me since my children flew the nest. So over the weekend,  he is in charge of the kitchen. However, because he can’t (or won’t) cook, he has to take me out, who is complaining? not MOI as I love going out, and this way  my kitchen stays clean. So we all win.
