What a lovely idea – Angelic Deviled Eggs. Don’t they just look fabulous? (and yes they taste just as good as they look) Are they full of fat? Not really, as I removed some of the yolk for this recipe so I can enjoy them without too much guilt! This is my snack that I like to have when I am watching television – I usually have an orange or and apple but this is my favourite. I don’t like to suffer when it comes to my food , but I don’t want to gain weight either, so this is my compromise. I have just come back from a holiday of a lifetime. So did I eat lots and drink a lot? Yes I did, but this is what a holiday is for really! However, as soon as I get home, I give my self a week then I give my self a hard time – full-on diet time!.

I don’t know anyone who enjoys diets, but I do try to keep an eye on how much I eat-  I always eat healthily, but I have had the odd day when I say to myself, well….. just one more. Then I regret it in the morning! I was going to do a diet sheet for just one month for you people to enjoy, but I though no – let them enjoy themselves!

Instructions
  1. Cut the eggs in half, remove the yolk.
  2. Now rinse the egg white then put flat side down in a paper towel to dry.
  3. With a fork, mash 3 of the yolks with the lemon juice, horseradish, mustard, then freshly ground mix well. Discard the remaining yolks (keeps the calories down)
  4. Now fold in the red pepper paste then put in a piping bag.
  5. Arrange all the eggs on a plate then pipe in the mixture, then decorate with same pepper paste.
  6. Now grate over one lime, then serve as you wish.
  7. I serve this dish with other canapés or as a snack on its own.
Recipe Notes

You can use roasted peppers to decorate instead if you like. Here the recipe for Mediterranean Red Pepper Sauce
