These lovely Apple Streusel Cupcakes are ideal for a quick, easy and no fuss treat. Just right to go with an afternoon tea – it makes a change from the usual sponge or biscuits. It’s nice to have with your friends or you can take it to your loved ones, the crumble topping takes just minutes to prepare. I love using up the odd apple that has been left uneaten. We all have a way of using let-overs, well this is my way.

There are many ways of using up left over fruit –  I sometime freeze certain fruits –  especially apples, as they are easily frozen. You will find them in your neighbour’s garden if you are lucky and they may give you some!

As a child, no one taught me how to bake, only how to cook savoury food. I learned how to bake as I got older, from my friends’ mums but mostly from watching cookery programs on TV. I could never remember every detail in the recipe, but as I like to create food all the time, I had lots of practice! Sometimes I got it wrong, but I never gave up until it was right. I really enjoy cooking and baking very much, especially when it come to cakes. I love creating new ideas.

Instructions
For the topping:
  1. In a large bowl, with your fingers, rub the flour, butter and the sugar together well then put aside for later.
For the sponge
  1. Cream the butter and the sugar well then add the the eggs - mix, then add the rest of the ingredients and mix again.
  2. Spoon the mix into the prepared paper cases, making sure they are all even.
  3. Now sprinkle the prepared crumble over the muffin cases.
  4. Bake in preheated oven gas 3/170c for 25 mins.
  5. Transfer to a wire rack and then let them cool down.
Recipe Notes

You can make 14 cup cakes from this recipe but I choose to have mine bigger!

    If this is the magic you create with left over fruits, I want to rush over to your place right away with a whole basket of fruits. And as you weave each fruit into something supremely delicious I want to be enveloped in the gorgeous aromas emanating from your beautiful kitchen and look on starry eyed at what you do. I am in love with the Apple Streusel Cupcakes. The crumbly crust has got me salivating. That you put your heart out into the food you make shows.
