These lovely Apple Streusel Cupcakes are ideal for a quick, easy and no fuss treat. Just right to go with an afternoon tea – it makes a change from the usual sponge or biscuits. It’s nice to have with your friends or you can take it to your loved ones, the crumble topping takes just minutes to prepare. I love using up the odd apple that has been left uneaten. We all have a way of using let-overs, well this is my way.
There are many ways of using up left over fruit – I sometime freeze certain fruits – especially apples, as they are easily frozen. You will find them in your neighbour’s garden if you are lucky and they may give you some!
As a child, no one taught me how to bake, only how to cook savoury food. I learned how to bake as I got older, from my friends’ mums but mostly from watching cookery programs on TV. I could never remember every detail in the recipe, but as I like to create food all the time, I had lots of practice! Sometimes I got it wrong, but I never gave up until it was right. I really enjoy cooking and baking very much, especially when it come to cakes. I love creating new ideas.
