BBQ Chicken with Lemon and Coriander

What else do you need to know?  It’s moist, not over cooked, tasty and tender, you can taste the lemon and coriander straight away. Not forgetting the beautiful aroma that all the neighbours can smell!

BBQs, why do we love them? Let me tell you – because the sun is out, drinks are cold, every one is happy, it’s an excuse to get together. I have to say I love having a BBQ, I do try to make the most of the weather her in the UK – let’s face it, we don’t get many opportunities to get out in the sun over here!

Quite often, the secret for getting the perfectly cooked results from any BBQ really is whether you turn the food often or not (this always depends on the type of food being cooked) and (if you have the choice) whether you cook it with the lid up or down – again, this depends on the type of meat or other food being cooked, and not to overlook it on the outside or under-cook it on the inside.

Some people say they’re not fans of BBQ food – well…………. I don’t think they are doing it right – cook it well, and it’s one of the best summer meals you can have, believe me.

Instructions
  1. Put the chicken in a deep bowl, then pour over the salted water. Leave for at least 2 hrs.
  2. After 2hrs take the chicken out of the bowl, then with a sharp knife. Slash the breast and thighs.
  3. Squeeze the juice from the lemon and massage in well.
  4. Add the rest of the ingredients to the chicken and massage in well.
  5. Take a large plastic bag, put the chicken in with the marinade ingredients, then leave to rest in the fridge, for at least 4 hrs or better still, overnight.
  6. The next day, (or after 4 hours) make sure you take the chicken out the fridge at least 1hour before you BBQ. ( the reason for this is so the chicken will cook through better)
  7. When the BBQ is hot, make sure you oil the grill, this so the chicken will not stick.
  8. Cook the back first for at least 10mins on low flame.
  9. Then turn over and cook for a further 10mins.
  10. Keep doing this until the chicken is done.
  11. Because the chicken is medium you need to cook it on a low flame and keep turning every 10mins or so. This way it will cook through.
  12. Serve with one on my nice salads. Enjoy.
Recipe Notes

Try serving this with this salad - lovely!  The reason for the salted water, it will tenderise the chicken tender.
