I’m using a simple, small Thûros BBQ, which is ideal for cooking things like steaks – cooking close to the charcoal, which you can do with this type of BBQ, allows you to get the meat as rare as you like, whilst still getting the beautiful smoky charcoal flavours. Also, you can seal your steak very quickly and this is the best way to cook a steak in my opinion – of course, not everyone has the same ideas when it comes to cooking, but in my experience the best steaks are always those that are sealed correctly – always try to seal and cook the fat first on the edge of the steaks.
Barbecue season never has to end – they should be fun at any time of the year, and you can use it more often – not just when friends are coming. You can light it just for the two of you to enjoy, along with some nice chilled wine, hot garlic bread and salad and any other ideas you may have.
