This BBQ Fillet Steak will melt in your mouth. If barbecued correctly, steak doesn’t get any better than this.It’s nice and juicy, tender, and really flavoursome.

I’m using a simple, small Thûros BBQ, which is ideal for cooking things like steaks – cooking close to the charcoal, which you can do with this type of BBQ, allows you to get the meat as rare as you like, whilst still getting the beautiful smoky charcoal flavours. Also, you can seal your steak very quickly and this is the best way to cook a steak in my opinion – of course, not everyone has the same ideas when it comes to cooking, but in my experience the best steaks are always those that are sealed correctly – always try to seal and cook the fat first on the edge of the steaks.

Barbecue season never has to end – they should be fun at any time of the year, and you can use it more often – not just when friends are coming. You can light it just for the two of you to enjoy, along with some nice chilled wine, hot garlic bread and salad and any other ideas you may have.

Instructions
  1. When your BBQ is nice and hot and the coals are white, brush the grill with oil to make sure the steaks will not stick. (I use rosemary as a brush as I have lots in my garden!)
  2. Using tongs, carefully put the steak with olive oil if you wish or leave it to cook natural then BBQ for 1 mins on each side. Dot over cook it, unless you want it well done.
  3. Make sure you turn them both at the same time, only turn once. If you turn steak to many time it will stew and you wont get the flavour that you need.
  4. Cook for 2 mins on both sides for medium rare Take them out and then let them rest for about 1 min then enjoy. or 1 min if you like it rare.
  5. Serve as you wish, I sliced mine as I wanted to show you the inside. Serve with salad and Dijon mustard.
Recipe Notes

For best results marinade your steak in olive oil the day before or for a few hours, then just before you light the BBQ remove it from the fridge.
