BBQ Stuffed Sea Bass with Courgettes

BBQ Stuffed Sea Bass with Courgettes. The reason that even the title of this dish sounds delicious is because it is! You get the magnificent flavours from the dill and the garlic, not forgetting the aroma as soon you open the foil it’s been cooked in.

I love this kind of fish –  I call them blue Omega as they are full of omega-3 and the are blue and their flesh is so shiny and smooth. Along with sardines and mackerel, sprats and sea bream this beautiful Sea Bass is among my favourites.

You can do so much with this fish, it’s what I call a really easy fish to cook in so many different ways – and perfect for a light summer time dinner or BBQ. I love when fish are in season, I always try to make the most of them, especially in the summer when I do plenty of BBQs or simply grill it back in the oven. There are lots of people who are not too sure which spice to add when it come to fish. Well it is easy just keep it simple, and you wont go wrong.

Instructions
  1. Spread 2 sheets of tin foil on a flat surface - make sure you double it up.
  2. Season the fish with salt and pepper, add the chilli then the tomato and then the dill - mix well.
  3. Make a boat shape with the tin foil, spread the courgette inside then add the seasoned fish.
  4. Now dab the butter on top of the fish.
  5. Squeeze lemon juice over the sea bass and close the foil from both ends.
  6. Make sure your BBQ is very hot, and when all your veg are ready and it is time to eat, just pop the fish on top of the BBQ for at least 10 mins. Then open the foil and add more lemon juice, and cook for a further 10 mins.
  7. Remove from the BBQ, stuff with the courgette and serve.
Recipe Notes

The courgettes should now be full of flavour from the fish, it's a good way of using your veg.
