Bread and Butter Pudding

This Bread and Butter Pudding is nice and light and fluffy. To appreciate this pudding is to have it straight from the oven to your bowl, and served with a good dollop of cream or ice cream. Traditionally is served with custard, but of course it’s up to you what you want to serve it with. I love it with ice cream and custard, each to their own I say. This is a classic British dish.

Bread and Butter Pudding is a traditional pudding that was made in the old days, and of course many cooks still make it now – not just because it’s delicious and easy to make, but it is also very economical, as it uses up old bread. If you are keeping an eye on your budget, then this is a great pudding for you.  You can even cook it in a microwave –  it’s that easy.
I love making this pudding because I know I can change it from sultanas to berries, and I can also spice it up with things such as cinnamon or nutmeg or even a liqueur –  yes,  you read that correctly! Sometimes I add rose-water or orange flower water. Bread and butter pudding is a constant a winner when it comes to well-loved traditional puddings.

Instructions
  1. Butter an oven proof dish.
  2. Now butter all the bread and cut each slice into four triangles.
  3. Lay one layer of bread (buttered side up) and sprinkle with one tablespoon of sultanas, then add the second layer of buttered bread and sprinkle with more sultanas, and so on.
  4. Add the last layer of buttered bread then then sprinkle with cinnamon.
  5. Whisk the eggs, the milk, cream and the sugar then pour over the prepared buttered bread.
  6. Leave to stand for 45mins. then cook in a preheated oven gas mark4/180c for about 30 mins. Enjoy straight from the oven!
Recipe Notes

You can replace the bread for brioche (trust me its delicious)

Also, when you leave the prepared dish to stand, before cooking, if you cling film the dish very well (so that it is really well sealed and cannot leak!) and then turn it upside down for at least 15 min before cooking your bread and butter pudding will rise very well indeed, as the bread will soak up the mixture more easily.
