Cherry Chocolate and Vanilla Sauce

This easy to make Cherry Chocolate and Vanilla sauce is very impressive. If you are on a diet, this is the one for you. It has small amount of sugar and made with pure cocoa. We all love puddings and a rich sauce to go with them, but pudding and sauce could make us feel a bit too guilty. This is why I came up with this recipe, I added the sweetness from the ginger juice, so you won’t feel so guilty, you don’t have to add sugar if your fruit is sweet.

You will be surprised to know how easy it can be to diet but still enjoy your indulgent guilty pleasures. I do also like to cook new dishes and I often challenge myself with healthy food so I can enjoy my holiday food without too much guilt! There is no such thing as a diet on holiday for me, but I do try to swim a lot to make up for my Chianti and pizzas. You can guess where I am going this time.

This sauce can be used to go with loads of different puddings and cakes, and it goes particularly well with my Summer Pudding.

Instructions
  1. In a small saucepan put in the washed cherries (no need to stone them) Add in the water, sugar and vanilla pod then simmer on a medium heat for about 5 mins.
  2. Let it cool down then with a with potato masher press down the until all the juice is squeezed out.
  3. Now the sauce is cold, put it through a sieve and then with a back of the spoon press down to get the all the juice out, then discard the skin and the pips.
  4. Put the sauce in a small bowl then add the cocoa powder (mixed with a little water) along with the Ginger syrup and mix well.
  5. Your sauce is ready to serve. Enjoy!
Recipe Notes

If your fruit is very sweet you then don't need to add sugar.

This sauce goes great with my Summer Pudding.
