Chicken and vegetable soup – a classic? I think you’ll find this one a little different from the usual boring ones generally available.

I love this soup as it’s not heavy –  barely has a single calorie, and tastes like heaven.

As I love cooking healthy food, this is one of my favourites for all round goodness being a very smart, healthy option. When I am getting ready for a holiday and need to look after my waistline, this is an ideal choice, yet it is also surprisingly filling. We all need to look good in our bikinis! (what I probably really mean is that this type of food beforehand allows me to eat more whilst on holiday!)

The protein content of this soup is nice and high. All the lovely fresh veg will work magic inside you and you can be sure you’ve had all the nutrients you need from this one meal!

This chicken and vegetable soup is very tasty, and being quite light, is great for summer or  winter. Wonderfully easy to make, what’s not to like about it? To me, anything that tasty and easy to make I grab with both hands and enjoy making and eating it.

Instructions
  1. In a large deep pan put all the vegetables, herbs and pepper (but not the salt) add in the stock and bring to the boil.
  2. Throw in the chicken and the lemon grass then simmer for 45mins or less if you prefer your vegetables less cooked.
  3. Next, take out and discard the lemon grass, and bring to the boil for 5 mins then have a taste - if you feel you need to add salt then do so, add the cream and the lemon juice and continue for 5 min and turn off the heat.
  4. The reason for this is because the sweetcorn and the lemon grass can add enough seasoning to the dish, so its up to you to add extra seasoning or not. I always add a drizzle of good quality of olive oil as I love the stuff, but that's me, again, it's up to you.
Recipe Notes

It is important, if you use creme fraiche, to whisk the lemon juice with the creme fraiche  before you add it to the dish, or it will curdle.

    I like this recipe because it looks as if it will be quick to make and chicken soup is supposed to be very good for you – I remember my grandmother saying that if you were ill then the best food for you is chicken soup!
