Chicken in a Basket

This chicken in a Basket is a lovely easy snack. It’s not greasy or crumbly,  just full of flavour.

My family and I really love chicken, and if it’s an easy, quick snack you’re after,  this is a good one to make. I’d rather make this than have a take away (unless I’m feeling lazy!) and I like to know what I am eating – this recipe it’s as quick to make as waiting for a take away delivery, and it cost less –  we all usually have a little bit of chicken or fish in our freezer.

We all know how to fry chicken, but to keep it tender is not as easy as a lot of people think, because  as soon as you add the bead crumbs it can dry the chicken out. Also the chips are not just standard fries, in other words, this is my way of saying that both the chicken and fries are more tender and tastier then most of the ones I have tried.

This snack it’s not just delicious, but a wonderful experience to eat. When you take a bite it’s crispy on the outside and soft on the inside, because I coat it with  fresh breadcrumbs. Try it  – I promise you will not be disappointed.

Instructions
For the chicken:
  1. In a large bowl, put the chicken strips, lime juice and the crumbled stock and mix well, then add the yoghurt, freshly ground black pepper and put in the fridge for 4hrs or even better, over night.
  2. Take the chicken out of the the fridge and shake out the excess yoghurt.
  3. Put the chicken in the whisked egg then coat with bread crumbs, shake the excess off and shallow fry on high heat until nice and golden.
  4. Take out and put on a paper towel to absorb the excess oil. Serve hot with the fries.
for the fries:
  1. Season the fries with salt, and fry until they are golden colour. (no need to rinse the cut fries, this way I promise you will get the best flavour)
  2. Take out from the frying pan and put on kitchen paper to adsorb the excess oil, then serve immediately with the chicken.
Recipe Notes

You don't have to marinade the chicken if you are in a hurry, but for the best results I would advise you to do it.
