These pancakes are exactly how I like them to be, light and fluffy. These Fluffy Blueberry American Pancakes are also very moreish. I drizzle some pure maple syrup over them and add a few more blueberries, just to show them off! I mean, be honest, who would want to showcase these without real Canadian maple syrup?
No matter how lazy I get when making breakfast in the morning I can easily manage to rustle up a pancake, just like that. Although sometimes I cheat – I go to the freezer and take them out. Pancakes freeze very well.
