  1. In a large bowl, mix together the flour, baking powder, salt and bicarbonate of soda.
  2. Add the blueberries and mix again.
  3. In another bowl whisk the eggs, and sugar well, then add the buttermilk and melted butter. Mix together then pour in the dried ingredients and mix by hand.
  4. Having lightly greased it, heat up a shallow pancake griddle or a pan, drop a large tablespoonful of the batter into the pan, this will give you a small round shaped evenly sized pancake.
  5. Cook for one min then turn over and cook the other side.
  6. Serve with Canadian maple syrup or honey and extra blueberries. Enjoy.
Recipe Notes

Don’t forget to lightly grease the pan with the butter between each pancake.

Don’t press down on the pancake after flipping it, as the blueberries will bleed out!
