Healthy Chicken and Turmeric Soup

This is a very healthy soup that I always make for my daughter if she is ever unwell. The soup is creamy and full of goodness, like garlic which is very good for our heart. Also, turmeric, ginger and cumin are believed to be very good for your digestive system, and also it settles the stomach and much more. So these four ingredients are all very good for our tummy. I have always made this soup for my children when they are feeling unwell. Whether you’re young or old, it has really worked for my family. There are may ways to make a healthy soup, but this one for me does the job best. Let’s hope it works for you too.

Instructions
  1. In a large stewing pot add the whole chicken with the water. Make sure the chicken is covered.
  2. Add all the ingredients apart from the rice, give it a stir then bring to the boil for about 45 mins.
  3. The chicken should be nice and tender by now, pour through a colander into a large bowl making sure you reserve the liquid. Collect the carrots from the colander.
  4. Back to the liquid that you reserved, on a medium heat, bring to the boil then pour in the rice. Keep stirring or the rice will settle in the bottom.
  5. Slightly mush the carrot using a fork then add them to the liquid.
  6. Cook for about 5 mins then turn the heat off. Let the rice absorb the liquid.
  7. Pick the best part of the chicken and throw away the carcase. Add this chicken to the broth.
  8. When you are ready to serve the soup, pour into a bowl with a squeeze of lemon juice and serve.
  9. Enjoy.
Recipe Notes

If you want a clear broth, before you add the rice pass the broth once more through a sieve.

Extra lemon when you serve is a must, but this will depend on your personal preference.

Use rice that will absorb liquid like pudding rice or basmati.

    I made this soup this morning and it is so delicious, I can’t wait for lunchtime! It was so easy to make and I had all the ingredients in my cupboard, so no extra shopping required. I shall certainly be making it again. Lovely!
