We all love all kinds of potatoes. These Herbed Sauté Potatoes are full of flavour because they are boiled with the skin with salt – this makes all the difference! My favourite potatoes to use to make this dish are Charlotte or any kind of potato that boil well. There are lots of varieties about. So you can use any kind of potatoes that are good boilers, as long you have not just dug them from your garden and then cook them on the same day. Trust me I have experienced this, and it’s not a good idea as they will turn into mush.

I grow lots of potatoes and it’s often hard to know what kind to grow, I like to take a risk sometimes and try growing new varieties and hope for the best, I have never been disappointed so far.

Some of my friends stick to the same variety of potatoes each year, and they become very good at growing certain types, but I like to mix it up a bit and discover new types of potatoes to grow along the way!

These Herbed Sauté Potatoes are a great accompaniment to all sorts of dishes – so let’s get on and make some now!

Instructions
  1. In a large saucepan, put in the potatoes, add the water then salt, and bring to the boil then lower the heat.
  2. As soon as the potatoes are ready, drain the water and let them cool completely.
  3. Peel the skin off the potatoes, then cut into 4 wedges then cut in half again.
  4. On medium heat, in a shallow pan, add the oil and heat it up.
  5. Fry the cold potatoes, turning them every 2 mins or when you see them getting crispy brown.
  6. Sprinkle with salt and pepper, parsley and chilli, and toss briefly.
  7. You should now have nice crispy potatoes to serve as you wish.

This side dish would be ideal to serve with my Skate Wing with Black Butter.
