Honey Roasted Parsnips

Delicious Honey Roasted Parsnips. I love them, especially if they are small and tender. There are some that are so sweet that you can eat them raw in salads. I like to make them when I do a roast dinner, but I like to make them that little bit different, too.  I feel it’s best to steam them, then glaze them, with a sprinkle of my favourite herbs.

I never knew you can make cakes from parsnips until I recently came across that as a suggestion, so I tried making one – and it was beautiful.  Parsnip is a root vegetable and is related to carrots and parsley –  they are also very easy to grow, and my husband loves them. When I get them I always give him a choice of how he would like them cooked – he nearly always asks for them like the following recipe – Honey Roasted Parsnips. They’re also nice grated into a salad with lots of lemon juice or made into a purée.

Instructions
  1. Preheat the oven to gas mark 4 (180c)
  2. Wash the parsnips, and peel them. Place them in an oven proof dish with the water having coated them with the honey and cumin seeds. Cover (to make sure they don't burn and dry out) and bake in the oven until they are tender - around 20 minutes.
  3. You can uncover to brown them, I prefer them lighter in colour and sweet.
  4. No need for Salt and Pepper
