Hot Chicken and Chorizo Salad

Who does not like hot chicken and chorizo salad? Or any kind of warm chicken to add to any dish?

As for this recipe, you get the warmth and the flavour of the chicken, the crunch from the pomegranates, and not forgetting the freshness from the lettuce. To add some more colour and more flavour to the dish, I have also added chorizo. You must get the ones that are already cooked, some are smoked and some are not. They have a deep red colour.
Every month, three of us girlie’s get together to et and chat. Each one of us make a dish, then we talk about the dishes, then of course, we enjoy the food. We chat about our children, what we got up to in the month, and so on. We have been doing this for years and we love it.

One of the three, Zara,  always makes the dessert –  we call her our Queen, as she is the one who seems to make the all the decisions, I will tell you more about her when I get to cook one of her recipes here.

However, my other friend Jo made this salad for us. I like it so much I thought I would share it with you. Don’t you think it’s so colourful and simple and easy? Let me show you……

Instructions
Cooking the chicken
  1. Wash the chicken then season as you wish.
  2. then put in hot oven gas mark 6 uncovered, until its cooked.
  3. Take the chicken out of the oven, then let it rest for about 5mins.
  4. Shred the hot chicken for the salad.
Making the salad
  1. In a deep bowl put in the mixed lettuce and add the hot chicken.
  2. Now add the chorizo then sprinkle with the pomegranate seeds
  3. No need to toss, this way everyone can see the beautiful colours. Enjoy...............
Recipe Notes

Don't throw the bones away, you can make stock or broth with them.
