What an amazing soup this is, not only nutritious, but full of vitamins and high in fibre and protein which is very good for you. Lentils cook much more quickly than dried beans and do not have to be soaked before cooking, I do soak them sometimes if I am in a hurry to get the meal cooked quickly. I was always told to soak any pulses, I find this method makes it creamier. Lentils are used a lot in India and the Middle East, you can buy them in tins or dried. I always look out for little stones that are sometimes present, so watch out for them in case this happens.
Lentils come in a few colours but my favourite are these brown ones as they have a nice flavour to them and it is easy to invent any dish with them. They are also very affordable. I noticed that they use lentils a lot in restaurants, but they use those little ones black ones, to me they have no flavour compared to these. I also love them curried.
