For the mince pie
  1. Preheat the oven gas mark 3 /170c Grease your cup cake/Yorkshire pudding tray or use a non-stick one.
  2. Roll the dough out to about 1cm, then cut out 20 circles and put them inside the prepared tray.
  3. Fill each short bread with mincemeat, then cut out another 20 slightly smaller circles, to make the lids, then press down.
  4. Make sure you use a ridge cutter to get the nice effect.
  5. Back in the oven on a low shelf for 20 mins. As soon as you remove them from the oven, sprinkle with caster sugar. Let them cool down on wire rack.
  6. You can see how crumbly the pastry is. Store them in air-tight containers, and they should keep for easily up to a week.
For the fun mince pies:
  1. Or you can split the dough in half and make these special kind of mince pies – they are really and fun to make as long you have the mooncake shaper, then you can make these.
  2. Take a small ball of dough, about the size of walnut and fill up with mincemeat then close up and roll it.
  3. Now use your choice of a stamp and then press down then release. this is how they should look.
  4. Cook them the same as above. I think they look amazing and its different.

You can freeze them, also they will keep for a week if stored well.
