Are you ready for this nice and easy recipe recipe? You won’t be disappointed – it’s smooth, tasty, and crunchy at the same time. Yes, for those who follow me well, they should know that I don’t usually make desserts, not only because they are naughty but my weakness is delicious breads, and so I try to go for that instead – I couldn’t possibly do both, as I’d be the size of a house!

Many of us like a good dessert from time to time. I certainly do. I have to say last weekend I had a dinner party but I did not have the time to make a long baked dessert, so I came up with this as it’s so nice and easy, and you can guarantee that your friends will not be disappointed with the result, as everyone loves mango and cream. (Like I said…. a bit naughty!)

I have to say my favourite desert is sticky toffee pudding –  nice and gooey served with home-made custard, and yes, you heard me right – when I go for a pudding, I really go for it!. I will have to make some soon and I’ll put it here on my blog for you all to share – I have to say, I make a wicked one!  Sometimes, you have to make a dessert to suit you when you’re in a rush, and I think this Mango Cheese Cake is an ideal one for that. You can just serve it, with no need to cut it into portions or present it on a special plate, so I think it was a good choice of mine. I am sure you will all agree with me.

Instructions
  1. In food processor, pulse the biscuits then half way, add the butter. Keep pulsing until it is kind of smooth, yet quite firm.
  2. Make a 1" (25mm) layer of this in your choice of glasses, making sure it is well pressed down, then refrigerate for at least 1hr.
  3. In the meantime, peel one mango and puree it, then keep aside. Now peel and dice the second mango and also set aside.
  4. Boil the water and add the gelatin, making sure you keep stirring until all the gelatin has dissolved, then let it cool down.
  5. Now, with a fork, whisk the cream cheese then add in the diced mango and then add the gelatin in and mix again.
  6. Take the glasses from the fridge and pour over the mango, cheese and gelatin mixture, then put back into the fridge.
  7. After 1hr, take the glasses out from the fridge and pour the mango puree on top, then cool again.
  8. Just 30 mins before serving, decorate with your choice of items. I added a squirt of vanilla cream. and a cigar biscuit. Wonderful.
