Mediterranean Spicy Rice with Sweet Pepper Sauce

This side dish is nice and easy to make, and it tastes just as good as it looks. I called it Mediterranean spicy Rice with Sweet Pepper sauce because that is exactly what it is…. Look at the colour of it – vibrant like a tangerine! Sweet as in sweet pepper, but also spicy, as I added chillies to it as well as harissa which I like very much. Of course, you can adjust the chilli to suit your taste buds.

I remember making this dish many times as a side dish to go with a main course. I also often serve it with a BBQ. You can have this dish cold or hot – either way it is delicious. I grow lots of peppers in my garden and I find this is a really good way to use up my crops. I also roast some of the peppers then I purée them for a sauce. Instructions
  1. Roast the peppers in the oven, then peel them and then set aside.
  2. In a frying pan on a medium heat, add the olive oil. When it comes to a smoky point, add all the ingredients apart from the peppers, stock, and the rice.
  3. Fry for 5 min or until the vegetables are translucent then add the rice and keep tossing.
  4. Add the chopped pepper and 1 cup of vegetable stock. Mix well and then lower the heat, simmer until all the liquid has been absorbed.
  5. Turn the heat off and serve as a side dish with fish or as you wish.
  6. Delicious, enjoy.
