I love this Onion and Chilli flat bread.  It has a really nice texture and you can truly taste the olive oil – this bread is really perfect to go with your BBQ. It’s so nice and easy you can even bake it on the BBQ, as long as you keep the lid closed if you have one.. Sometime I make this bread with olives, and it’s just as nice.

For those of you who follow my recipes, you will probably soon realise that I don’t cook loads and loads of gâteaux and cakes – the reason for this is that I’m always trying to keep an eye on my waistline – the trouble is, I have such a weakness for all types of bread (like this one) that I have to try really hard to keep away from sweet things like cakes, otherwise I’d be in real trouble! Yessss….. beautiful bread!  I just can’t help my self from time to time –  I get naughty, but it’s irresistible.

Instructions
  1. In a food mixer with a dough hook, mix all the dough ingredients, whilst adding the water, but keep and eye on it as you may need less or more.
  2. The dough should be nice and smooth, but not too dry - a good dough should have bubbles like the photo. Then leave it to rest in warm place.
  3. In mean time chop the rosemary and mix in the garlic and harissa then olive oil and set aside for at at least 4 hrs.
  4. The dough should have doubled in size. Roll it flat like a pizza base, then put in a non-stick sandwich tin. With you fingers, spread over the rosemary mixture with the chillies, and be sure to go right up to the edges. Decorate with roasted peppers and sprinkle on baby chillies.
  5. Then let it rise again for at least 2 hrs.
  6. Preheat the oven to gas mark 5/190c , and bake for about 20 mins or until it becomes golden in colour.
  7. Take out and leave in the tin for at least 2mins then turn out onto wire rack. Cut it into any shape slices you like and enjoy.
