This beautiful fish does not need much seasoning. I love being able to taste the ocean when eating fish – a good way of telling it is fresh! Sea Bream is a quite meaty fish –  tasty and very easy to handle. Filleting it when cooked is pretty easy as the bones are generally large and easy to spot. You get the best flavour if you cook fish with bones. We don’t seem to eat as much fish as we eat meat, probably because we don’t all know how to cook it. You will be surprised how easy and simple this is to cook. By the way, fish does not like lots of fussy flavourings – always keep it simple.

It has been known that fish gives you energy when you are weak or poorly –  it is packed with omega3. Fishermen say sea bream is the tastiest fish you can ge, whether it’s from the lake or the river. Apparently they are very popular in Florida, so I was told.

They’re certainly not the cheapest fish, but they are worth it – better value if you get them when they are in season. I always try to eat fish in season because I know they are fresh and they don’t cost as much.

Instructions
  1. Have a 14" by 11" shallow oven tray ready lined with foil, then add the sea bream.
  2. Grate half the red chilli, add the grated garlic and squeeze half of a lemon over the fish and massage well.
  3. With a sharp knife, cut the fish, insert the slices of lemon and slices of the rest of the chilli, then sprinkle the oregano and drizzle the olive oil over the fish then cover with tin foil. Make sure the foil is not touching the fish.
  4. Preheat the oven on a hight heat (gas mark 6/200c) and cook on the middle shelf for 25min.
  5. After 25min of cooking, remove the foil and let the fish brown in the oven for a further 5min.
  6. Take out and garnish with slices of chilli and lemon. Serve with green salad.
Recipe Notes

Never over cook fish, as it will dry.
