Patates Spastes – Potatoes with Wine , is a unique way to cook potatoes.This is a delicious twist on classic baked potatoes. This technique was taught to me by an old friend of mine from Cyprus.They crack them so to absorb the flavour of the wine. They are very tasty, although you don’t have to use wine if you don’t want to. Also this way they get to cook quickly.
Cyprus potatoes are well-known here in the UK. They grow in rich red soil, and they make good chips – not just because they are long but the are very tasty. They boil well too, you can do what you like with them, and you won’t be disappointed, in my opinion. I have never baked them as they are kind of flat – probably not the best shape for baking. I only buy them when they are in season. You really must try them if you haven’t already.
If you love tasty potatoes then this recipe is ideal. You could sprinkle these with any herb you like or even chilli flakes to add extra flavour. It’s really up to you, I like it this way so every one can enjoy them. Traditionally they are sprinkled with crushed coriander, but I prefer thyme. Like I said – it’s really up to you of course.
