Pear and Apricot Compote
or white if you prefer
Peeled, then de-cored, but left whole
slit down the middle
In a deep saucepan on a high heat, add the apple juice with the cinnamon, sugar & star anise, and bring the boil until you see the juice become think and syrupy.
Add the pears, the apricots and the plums and then lower the heat. Simmer for about 20 mins or until you feel it’s ready.
Carefully pour into sterilized jars – do this while the pears are hot, and store.
You can keep it in the fridge or in you cupboard once it has cooled down.
I kept some pears whole as they are very small and some I cut in half.
