Peppers and watercress salad. I love this salad, you get the flavours from the watercress, as well as from the roasted peppers, not forgetting the rocket leaves as they give it that peppery flavour. As for the beautiful Kalamata olives, they are bliss on a plate – of course you can use any other olives but I happen to have lots of these in my fridge to use up.
You don’t need to add any vinaigrette to it. Just a bit of seasoning, that’s all, as you could confuse the flavours of the dish. I like to make lots of different kinds of salads and this way my family don’t get bored with the same ones over and over.
