Who doesn’t love a beautifully roasted chicken? This particular one is really special – Roasted Lemon Chicken. I love lemon, and what better way to eat one of your 5 a day? (!) Chicken is also good for you as it’s full of protein. My daughter is really into her fitness and always running so I cook this Roasted Lemon Chicken for her a lot. You can prepare it the night before, so as soon you come home, it is ready for you to just put in the oven. Then you can get ready to relax with a glass or two of vino!

I don’t know about you, but I have always worked full-time, and the less I do after work the better. So I have had to organise myself well, with two children, well they are all grown up now, bless them. I find chicken is a really easy bird to cook, especially when you are in a hurry. You can stuff them, cut them, marinade them, do them in a hot-pot or slow cooker and just go.

Sometimes I crave comfort food, and I usually have a lot of recipes to choose from, but one my favourites I keep coming back to is Roasted Lemon Chicken.

Soon you will get to know me and my food as well as all my secrets in cooking – along the way you will find plenty of this ‘comfort food’ – some of it great for winter evenings in, or good warming food for a cold icy day – and I know we all have a dish that we call our comfort food that we cook when we miss home or our child hood or our family.

Here’s how to make this superb chicken:

Instructions
  1. Preheat the oven to gas mark 5/190c.
  2. Pour the water into the roasting tin, then add the rosemary, the bay leafs and then slice one lemon, then add the chicken on top.
  3. Brush the chicken with olive oil, then sprinkle with salt and pepper and parsley and then add grated lemon zest. Cut the used lemon in half and squeeze on the chicken.
  4. Cook in a the oven on the middle shelf.
  5. From time to time baste the chicken, and then cook until you see the meat has separated from the legs - this is a sign that your chicken is ready. Garnish with rosemary and serve with your favourite vegetables.
Recipe Notes

To see if your chicken is  cooked, use a skewer between the thigh and the breast  - if the water runs clear then it is ready.
