This roasted pepper dip is tasty and mouth-watering. Doesn’t it look a really vibrant red in colour? I feel as if I am in the Mediterranean when I make this dip. You can make this roasted pepper dip with all kinds of different peppers if you wish, but in my opinion the red ones are that bit sweeter.
I make lots of dips when peppers are in season. I even make them sometimes just to give them to my friends. You can use a nice jar and decorate it with a nice pretty ribbon and a smart label – it would make a great present to someone who loves dips or peppers.
We all have peppers that have been hanging around the bottom of the fridge from last week. Well you know what to do with them now – I added roasted courgette as they go together very well and after all, it’s still a vegetable and it gives it that extra colour in between the reds.
