Roasted Potatoes with Sage and Garlic

This Roasted Potatoes with Sage & Garlic recipe is truly the queen of them all, as you can see, the crust on top is shining and crispy but when you take a bite they are beautifully soft inside. It’s nice to have a different approach to standard veg on your table from time to time, we can easily get bored looking at the same food over and over – and these roasties are certainly different from the usual potatoes that we have on our table. I absolutely love potatoes, in fact that is one of my weaknesses when it comes to dieting. I do try my best to leave them alone, but sometimes we just have to turn a blind eye to the diet when there is something as lovely as this to try!

When I was young, one thing that I always remember is that we ate potatoes almost every day  – whether it was mash or French fries or boiled new potatoes as a salad, but my favourite was jacket potatoes baked under the fire pit covered with ash (not foil) and they tasted so delicious when they were fresh from the fire! Sometimes I do this in the summer in the garden, or even in my open fire in my lounge. We usually grow lots in our garden here, and it reminds me of the old days when I used to love to go and pick them for my Dad as he was in charge of the garden.

Instructions
  1. Peel the potatoes then wash them. Use two skewers on each side like the photo so when you cut them, you wont go right through.
  2. In a food processor add the pepper, salt, bread then sage leaves and blitz well. Now open each little cut slice of potato and try to sprinkle in the bread mix.
  3. Now your potatoes are all prepared, put them on a baking tray or dish and drizzle with olive oil. Cover them with foil, and cook in a very hot oven for 35 mins, gas mark 6 / 200c on the middle shelf.
  4. Then uncover them and cook for about another 20 mins or until you see they are golden in colour.
