Roasted Red Pepper Salad

These roasted peppers are sweet and tasty –  you can have this salad hot or cold, and you can add or use any colour you like –  green or yellow etc, it’s up to you. I prefer red peppers, as they are sweeter. You can use this as a side dish or as a starter.

As you can see they don’t have any black bits on them, this is because they were not put straight on a flame, but if I did they will taste even better. There are many ways of cooking peppers, and making salads, but this way is my favourite, nice and easy.

Instructions
  1. On a hot grill, roast the peppers and make sure you keep turning them until the skin is black and blistered.
  2. Remove the peppers from the grill.
  3. Carefully (they’re hot and the liquid inside of them is even hotter) put the peppers in a bag and close it. Then, when the peppers are cool enough to handle, use your fingers to peel away the skin.
  4. With a knife cut into thin long slices then put in your choice of plate then then decorate as you wish.
  5. Drizzle with olive oil and season, then garnish with parsley or coriander.
