  1. In a large bowl put everything in, including the vegetables, then season. Mix well, then leave in the fridge for 2 hrs.
  2. After the 2 hours has gone by, use a skewer and starting with some onion and then chicken then pepper then onion and so on. Keep repeating same process until they all done.
  3. Meanwhile, get the BBQ ready – nice and hot!
  4. Squeeze lemon juice over the skewers and a drizzle of olive oil, then cook for 2mins, and keep turning, doing 2 mins for each side.
  5. Serve with a nice crisp salad. See notes below for a suggestion.
