Salmon Wrapped in Pancetta with Dill

What a beauty! Salmon wrapped in Pancetta with Dill – nice and easy to prepare, and it has its own superb taste –  no need to add anything apart from dill, black pepper and a squeeze of lemon. I love salmon, and we must not forget how good it is for us, absolutely full of vitamins. I eat lots of fish, and my daughter loves salmon as she’s always running and so I always cook it for her, it makes a lovely change from chicken. No matter what, I always find something in my cupboard to accompany the dish as it is nice and easy to make.

I always buy salmon when it is in season  – if you don’t, you will pay lots for it. You can use trout instead of salmon -some people say it’s similar but I don think so. I know salmon is a large fish, but regarding the taste, I find trout stronger in flavour, so I have to disagree. Salmon live in the northern Atlantic and Pacific oceans, as well as the inland lakes like the Great Lakes.

I found the way that these lovely fish create their young really interesting – apparently, when the female decides to lay her eggs, she makes a cavity in the riverbed with her tail, and then drops her eggs into it. She waits for male fish to fertilize the eggs, and then covers them and moves on to do this again. They will do this as many times as it takes to lay all their eggs (up to seven times!) Sounds like hard work, but very caring!

Instructions
  1. Rinse the salmon with cold water.
  2. Sprinkle with the chopped dill and add the freshly ground pepper
  3. Wrap the salmon with the pancetta then put each portion next to each other in an oven dish proof, cover with foil or a lid.
  4. Preheat the oven to gas mark 4/180c then put the salmon on the middle shelf for 20mins, or more if you want your salmon well done (around 30 mins)
  5. Remove from the oven and then pour over the lemon juice - then cover and let it rest for 2 mins, then serve.
  6. Serve with dill, mayonnaise or hollandaise sauce, and buttered green vegetables.
