  1. In a large pan, melt most of the butter then cook until it turns nutty brown.
  2. Add the capers, parsley and cornichons, then quick fry until the capers start to open. Turn the heat off. Set aside.
  3. Heat the remaining butter in a frying pan and fry the skate for 2 mins on each side.
  4. By now the flesh should become firmer, and golden in colour.
  5. Transfer the fish to a plate, then pour the black butter sauce over. Serve immediately with a wedge of lemon. My choice of serving is capers in a basket.
Recipe Notes

No need for salt as the butter is salted, but add if you wish.
