Extra virgin olive oil
In a food processor, using a dough hook on a low setting, mix the flour, water, yeast and salt for about 10 min.
Add the olive oil and mix on a low speed for 5mins.
On a floured worktop, shape your bread as you wish, sprinkle with spelt flour on top of the bread, then put in a meat loaf tin, and let it rise for about 4 hrs.
Making sure the oven is very hot, put on the top shelf in the oven and bake for 15 mins on high heat – gas mark 5 / 190c fan oven
Take out and leave on cake rack to cool down.
Cover it with a cloth to keep it nice and soft. Enjoy with some nice olive oil or a crisp salad, or as you wish.
