Spicy Roast Potatoes

We all love roast potatoes. I love them nice and spicy and soft on the inside and sticky on the outside.They can be cooked in many ways, but this is my favourite way of cooking my roasties – spicy roast potatoes.

You can add coriander to them if you wish, but its all about what you are serving them with. I like to choose my potatoes very carefully and some roast better than others. The ones I’ve used here, are new from my garden, they absorb all the flavour from the sauce. Traditionally, the best ones for roasting are Maris Piper potatoes but there are plenty more.

Instructions
  1. In a large pan, boil the potatoes for about 15min.
  2. Take them out and let them cool down.
  3. Pre-heat the oven gas mark 5/200c and heat an oven tray for 5 min.
  4. Add some oil to the tray.
  5. Mix the harrissa with the salt and pepper, olive oil, & onions, then pour over the hot tray.
  6. Cook on medium heat until they are tender, and have nice colour.
