Strawberry Meringue with Pistachio

My Strawberry Meringue with Pistachio looks and tastes gorgeous. Crunchy yet light, and really colourful and fresh. The inside of the meringue stays really soft and chewy but the outside is crisp and crunchy. I am telling you this is divine –  don’t just take my word for it, make it! This is also my quick and easy dessert that I make when I want to plan a party the next day. This is a life saver when you are in a hurry, as you can prepare it a day early, then all you have to do is assemble it. There are many ways of making meringue –  some add corn flour, vinegar, etc, but like it this way –  Strawberry Meringue and Pistachio go really well together. The only trouble is that it’s a bit too hard to resist. You can add any filling that you fancy. I just happened to have strawberries at that time. We all love strawberries here in my house, we even go and pick them in the fields when they are ready, I eat some then I put some in my punnet, I am lucky I live only few miles to a well-known place called Cheddar where they are grown in great numbers – they are very popular when they are very ripe, sweet and juicy. Cheddar is well-known for its strawberries, cider, and cheese and pickles, and cream teas.

Instructions
For the meringue:
  1. Whisk the eggs in a mixing bowl on high speed until the meringue is nice a glossy then gradually add the caster sugar. Then carefully fold in the icing sugar spoon by spoon, this is done by hand.
  2. Spoon the meringue mixture using a metal spoon into a round shape on grease-proof paper. Now do the same, but a smaller shape to use for the topping.
  3. Sprinkle with crushed green pistachio nuts then bake in the oven on a low shelf, gas mark 1 (140c) for 30 mins, then turn the tray around, do this very quickly, then close the door.
  4. Bake for another 40 mins then turn the oven off, but keep the meringue in until the oven is cold.
  5. Slowly peel the grease-proof paper off, then placeon your choice of plate, but keep the small shape for the topping.
For the filling:
  1. On a high heat, boil one cup of strawberries and the sugar for 2 mins then turn the heat off. With a fork, mash some up then let it cool down.
  2. Add the vanilla to the crème fraiche, then spoon this on top of the cold meringue (without going to the edge) then add fresh strawberries on top.
  3. Break up the baked small meringue and crush and sprinkle them over the top, scattering them around.
  4. Spoon the cooked, mashed strawberry sauce on top. Scatter some pistachio nuts that you saved and decorate with fresh mint.
  5. So.... you should have one layer of crème fraiche then fresh strawberries, followed by crushed meringue, then cooked strawberry sauce, and finally pistachio nuts. Wonderful.
Recipe Notes

When adding the sugar, it is important to do it gradually, so that when you bake it will not leak out.
