  1. On a medium heat in a large saucepan, put all the fruit in with the vanilla and the sugar, and simmer for a few minutes.
  2. As soon as the sugar has melted, add the cranberry juice to the fruit and bring the heat up, then sprinkle in the agar or gelatine and mix in.
  3. As soon as it comes to the boil, turn the heat off, then set aside to cool down for 5min, then transfer into a round jelly mould.
  4. Put in the fridge to set for 4hrs, or better still, overnight.
  5. Make sure it’s set well, then with the tip of your finger loosen the edge then turn upside down.
  6. There – it’s ready to present and eat!
Recipe Notes

If your jelly does not want to come out of the mould, put it in a bowl of hot water for 2 min and this will help.
