Tajine Zitoune

is a lovely dish that you must try if you like olives. Tasty, creamy and sticky with a glossy sauce. The flavours are like Tsunami in your mouth. (Don’t forget, you are only allowed two drum sticks, not all is for you!) Although, I must say I can soak up a whole baguette in this sauce, it is just so tasty.

You don’t need lots of ingredients to make this dish, it’s so easy and the result is amazing. I had to cut the salt as there is no need to add it because you use lemons and olives. Some people boil the olives to get rid of the salt, but do you know what – I don’t – as I think the olives add a beautiful flavour to the dish without boiling to remove the salt.

This dish is from north Africa where I learned how to make it from when I was a little girl. I have loved cooking since I was at a young age, and I still do. Only now my children have left the nest – cry, cry, cry!  I started to blog, and one day, I hope, my daughter and my son will make all my recipes.

I think, deep down, I am doing this for them to enjoy, it’s called  love for your children, and I do love them very much.

Instructions
  1. In a deep, heavy pan on a low heat, sweat the onions in olive oil: then add the washed chicken and keep tossing for about 5 mins. Next add turmeric, ginger and black pepper and then keep tossing on low heat.
  2. After 10 mins add the sliced olives, then the sliced button mushrooms (or leave them whole), keep tossing, then add 1/2 cup of chicken stock.
  3. Cover and let it simmer for about 40 mins, then turn the heat off.
  4. Your Tajine Zitoune or Tagine Zitoune is done.
Recipe Notes

To make extra tasty add a squeeze of lemon, and a drizzle of a good quality olive oil, 30 sec before you turn the heat off.

Do not use too much salt or water, or you will lose all the flavours.

No need to add salt as the olives are salty. Some people rinse them, or even boil them, but I think my version is better.

Don't use fresh mushrooms, it does not work.
