The Best Cauliflower Cheese

I don’t say this very often, but this Cauliflower Cheese is The best Cauliflower Cheese. You will need to make it to believe this claim, but everyone I know who has tried it say that it s the best they’ve had!  I think it must be because I use good, strong cheese and it was my next door neighbour taught me this. I know it may be a little high in calories, but really –  how many of us watch the diet when  we are having fun? I know I don’t.

It’s really full of flavour and you can even eat it on its own as a main course or, more traditionally, a side dish – it’s really up to you.

This is a really nice dish to make in advance and just heat it up before your sit down for dinner. You don’t have to slave over your oven just before your guests arrive – I am a great believer in preparing things way in advance if possible – this way you can relax and enjoy the meal with your friends or family.

Instructions
  1. Bring the cauliflower to the boil for 5 mins, then drain away the water then put in an oven proof dish.
  2. On a medium heat in a saucepan, add the butter. As soon as it melts, add the flour then mix well with a fork or a whisk until the flour has absorbed the butter.
  3. Preheat the oven to gas mark 5 / 190c
  4. Gradually add the hot milk to the flour/ butter mix, and keep whisking without stopping. Keep adding milk a little at a time, until all the milk has gone, then add the salt and pepper and grated nutmeg, stir in, and you have a nice sauce.
  5. Now add the grated cheese to the sauce lower the heat and let it simmer for a couple of minutes.
  6. Pour over the cauliflower and cook in the preheated oven on the top shelf for 30 mins or until it's all golden brown.
  7. Serve it with nice garlic bread or with your roast dinner.
Recipe Notes

If you like nutmeg, add some extra in just before you cook it, it's delicious.

Note: cheese is generally quite salty, so be careful not to add too much salt.
