Bring the cauliflower to the boil for 5 mins, then drain away the water then put in an oven proof dish.
On a medium heat in a saucepan, add the butter. As soon as it melts, add the flour then mix well with a fork or a whisk until the flour has absorbed the butter.
Preheat the oven to gas mark 5 / 190c
Gradually add the hot milk to the flour/ butter mix, and keep whisking without stopping. Keep adding milk a little at a time, until all the milk has gone, then add the salt and pepper and grated nutmeg, stir in, and you have a nice sauce.
Now add the grated cheese to the sauce lower the heat and let it simmer for a couple of minutes.
Pour over the cauliflower and cook in the preheated oven on the top shelf for 30 mins or until it’s all golden brown.
Serve it with nice garlic bread or with your roast dinner.
If you like nutmeg, add some extra in just before you cook it, it’s delicious.
Note: cheese is generally quite salty, so be careful not to add too much salt.
