Tomato and Onion Salad

This Tomato and Onion Salad is a really nice and simple to make, a perfect side dish or you can have it on its own. I like to add lots different colours and varieties of tomatoes – not only do you get plenty of different tastes but you get a lovely combination of crunch and softness. Also, although almost any salad is nice, take care to dress it nicely and tastily, and you won’t go wrong.

The great thing about salads generally, is that they can go with so many different kinds of dishes, either as a side dish or to accompany the food on the main plate. Most salads can go with all types of fish or meat, whether these dishes are hot or cold – really versatile! Please don’t think that you have to include lettuce and cucumber in a salad – there are plenty of salads that are made up of a variety of other ingredients, including of peppers and olives for example.

Apparently, the ingredients in this Tomato and Onion Salad can purify the blood, and we all know that the Mediterranean people eat very healthily  – one of the reasons is that they eat this kind of food and a lot grow their own veg. So do I. I feel home-grown food is the best.

Instructions
  1. Wash and cut all of the tomatoes apart from the baby ones.
  2. In a large salad bowl, add the lemon juice, oil, salt and pepper, mustard, & sugar and whisk well with a fork. Then add the tomatoes and onion to it and mix well.
  3. Decorate with mint. I also added baby chillies and a slice of lemon. Wonderful!
