Vanilla Pumpkin Pancakes

These are not savoury pancakes, these are nice and sweet Vanilla Pumpkin Pancakes –  packed with pumpkin & cream cheese, spiced with cloves, and really sweet, with vanilla to top off the wonderful taste.

So these are pretty special pancakes – if you are looking to deal with any hunger pangs as well as satisfying a sweet tooth (as we all do from time to time!) then these Vanilla Pumpkin Pancakes are the ones for you!

Yes, these are a bit naughty but they are also quite healthy as long as you can resist eating loads.I love-making home-made pancakes as they are fun and they don’t take really take that much time. Sometimes we have to spoil ourselves, and this recipe is just right for that.

Cooking is sometimes described as an adventure,and I think for me, pancakes can be a good example of that  I love-making them and I seem to change the recipe as I go along, adding and trying different ingredients and ideas. I think if you really want to, you can make pancakes with pretty much anything really, especially when it comes to the fillings.These delicious pancakes are ideal for making ready for the next day, as they keep really well in the fridge.

Instructions
For the Pancake:
  1. Whisk all the ingredients together well.
  2. On medium heat, heat up a non-stick pancake pan.
  3. Butter the pan very lightly then add one small ladle of the batter mix, then cover and cook for 2 mins, turn over to the other side and cook for further 2 mins.
  4. Take out and put on grease-proof paper. Repeat the same process until all the batter mixture has gone.
For the fillings
  1. Mix the pumpkin, cream cheese and the honey well with a fork until all smooth.
  2. Spread over the back on the pancake then roll it up. Repeat this process to fill all the pancakes.
  3. Melt some chocolate then put in a small icing bag then squeeze over to decorate. Dust with icing sugar. Enjoy.

See the note for Sweet Pumpkin purée. I cooked 345grms pumpkin purée then I saved some for the fillings.
